February is nearly here which means the end to Dry January - yipee - and the arrival of Valentine's Day! The Cotswolds Distillery has created three delicious cocktails to be enjoyed on Valentine's night in the comfort of your own home. They are easy to make and will create the perfect atmosphere for an unforgettable evening for you and your partner. They can equally be enjoyed alone or over zoom with friends and are a great pre-amble to a delicious meal.

The Cotswolds Hanky Panky
The Cotswolds Distillery's take on the classic cocktail created by Ada Coleman (the first female head bartender of the Savoy) in the early 1900s. Incredibly complex botanical flavours, piney juniper, vanilla, earthy herbs & light smoky spice with a touch of citrus freshness. A fervent and sophisticated cocktail.

45ml Cotswolds Dry Gin45ml Cotswolds Vermouth
10ml freshly squeezed orange juice
5ml Cotswolds Whisky Amaro Liqueur No.2

HOW TO CREATE: Place all of the ingredients into an ice-filled cocktail shaker. Shake and fine strain into a chilled martini glass.
EMBELLISH: Orange peel.

The Cotswolds Wild Passion Spritz
Very refreshing. Deliciously fruity, bursting with sweet orange and tart citrus.

50ml Cotswolds No.1 Wildflower Gin
25ml lemon juice
15ml passion fruit syrup
Top up with champagne or soda

HOW TO CREATE: Place all of the ingredients into an ice-filled cocktail shaker. Shake and strain over ice into a gin glass. Top up with champagne or soda and stir.

The Cotswolds Cherry Love
Tangy citrus with sweet cherry flavours lift the dark fruits and smoky char from the whisky, finishing with a light silky spice.

50ml Cotswolds Single Malt Whisky
30ml pink grapefruit15ml cherry syrup
15ml egg white / aquafaba

HOW TO CREATE: Place all of the ingredients into a shaker and dry shake (without ice). Add ice, shake and strain into a coupe glass.
EMBELLISH: Grated dark chocolate and a cherry.

Experts Warn Against Using AI for Wedding Vows

With peak wedding season approaching, experts are warning couples not to rely on AI to write one of the most personal parts of their big day – their vows. A survey by jewellers Queensmith has revealed that more than half (55%) of UK brides and grooms are now using AI tools to help write their wedding vows and speeches, raising questions about authenticity, originality and even potential legal grey areas. The findings come amid a growing debate around AI-written vows after a registrar in the eastern Netherlands saw a marriage called into question when AI was used to help write the ceremony script. In the case, the District Court of Overijssel ruled that "no marriage has been established" after it emerged the registrar had relied on ChatGPT to draft parts of the ceremony. The case has sparked wider concerns that AI-generated wording could unintentionally mirror existing vows or scripts found online, raising questions about originality and authenticity.
